Merlot – Vintage 2008

This is our inaugural release of our 100% MERLOT from our Estate Rainbow & Misty Vineyards. The wine is a classic Merlot showing a pure ruby color and offering aromas of black cherry, plum, and blackberry with hints sweet pipe tobacco, menthol, and edges of lavender and sage. The wine explodes in the mouth with unexpected richness, depth, complexity and a silky smooth elegance not often found hereabouts.

Solus – Vintage 2007

This is our inaugural release of a purely varietal Cabernet Sauvignon. The wine has an almost bluish-purple hue. The nose opens with sour cherry and cranberry fruit. Following notes include tanned leather, wood smoke, sweet tobacco, mint and rose petals. At first the flavors are a little tight and edgy. But the wine has solid acidity and a firm backbone of tannin, and softens easily with decanting and aeration in the glass. I feel this wine has the stuffing and structure to age well and for quite a long period. Complementary foods demand steak or lamb, with any combination of tomatoes, olives and garlic. (Consume 2010 – 2017)

SOLUS – Vintage 2008

This is only our second release of a purely varietal Cabernet Sauvignon. The wine shows a lovely deep ruby color. The vineyard’s signature aromas and flavors of cherry and cassis dominate, while subtle notes of cedar, camphor, white pepper and pencil shavings round out the aromatics. The wine was aged entirely in French oak barrels, of which 20% were new barrels. A firm texture of natural acidity and sweet tannins balance out the intensity of the fruit on the palate, and encourage the notion that this wine will have a long life while developing and aging in the bottle.

V3 – Vintage 2011

Made of 100% estate grown grapes from the Baehner-Fournier Vineyard, our 2011 V3 expresses the sand and gravelly-clay terroir of the 5 ridgeline and radically sloped blocks that comprise the ranch. Planted in soils very similar to those of Bordeaux, the vines are subjected to blustery winds and extremes of temperature that produce small berries and concentrated flavors. Fruit, picked at moderate levels of ripeness, is destemmed and gently crushed to small open top fermenters and, after a 3 day cold-soak, spends and average of 18 days on skins to best extract the intense flavors and aromas that the estate vineyard produces. Aging for 18 months in 33% new French oak and a traditional fining with 2 egg whites per barrel have resulted in a firm and vibrant mouthfeel, with mocha-tinged aromas and flavors.

Sophisticated aromas of coffee and blackberry are complimented by similar flavors of dark fruits and black cherries. On the palate, our 2011 V3 is notable for its noble structure that is a reflection of the cool 2011 vintage. Delicious now, the wine’s firm tannins and fresh acid suggest that it will benefit from several years of careful cellaring. Optimum window of enjoyment: 2014 through 2021.

PETIT VERDOT – Vintage 2009

Petit Verdot, a late-ripening grape, has recently begun to attract attention in California. The varietal requires patience and care to know the right moment to harvest. In 2009 our small amount of Petit Verdot vines produced a lovely crop. We have decided to showcase the resulting wine all on its own. Rich and intriguing, the wine exhibits aromas of black cherry, violets, and hints of wood smoke. Lush and round in the mouth, it has deeply concentrated flavors and a long supple finish.

V3 – Vintage 2007

This, our second release of our highly acclaimed “V3”, bears a striking resemblance to the initial 2005 offering, and I believe that over time may prove to be the finer wine. The color has a classic Bordeaux appearance of deep dusty garnet. The wine is rich and powerful, complex, with multiple layers and a long luxurious finish.

V3 – Vintage 2005

This 2005 blend consists of Cabernet Sauvignon, Merlot and Petit Verdot. The fruit was hand picked from our vineyards on a cool morning in October, 2005. It was promptly de-stemmed, crushed and placed in fermentation bins. During fermentation we hand punched three times a day for maximum extraction of color from the skins.

When fermentation was completed we hand pressed the juice from the skins and seeds using a small Italian wooden basket press. We pressed this juice on a cool evening beneath a full moon while singing to our background CD – Mario Lanza classics. We can’t claim the music or the moon did much to improve our wine, but if the spirit of the wine makers can affect the quality of the wine, then this technique was a winner.

After pressing, the wine mellowed and aged in new and neutral French oak barrels in ideal, cool cellar conditions for eighteen months. Each of the three wine varietals was processed separately but prior to bottling, the wines were blended to our specifications as we strove for the right balance of flavor and complexity. The result is a lovely Bordeaux blend which we call V3 – a three varietals blend. The 2007 V3 blends equal amounts of Petit Verdot and Merlot (17%) to enhance the flavor and complexity of the Cabernet Sauvignon.
