Drew Horton is our winemaker. He shares our wish in allowing the grapes to undergo the magical process of fermentation with as minimal interventions as possible. He has worked for a decade in the wine cellars of three established wineries in the Santa Ynez Valley and lives on our Estate. He observes the evolution of our vines and makes careful recommendations. We all agree that the start of the winemaking process begins in the vineyards. |
The 2005 V3 wine is blended with 69% Cabernet Sauvignon, 26% Merlot, and 5% Petit Verdot.
The wine is rich and strong, extracted and ripe. Concentrated aromas and flavors of black cherry, cassis, mocha, and cedar predominate whilst on the palate a full-bodied leap into luscious and intense Cabernet based blend, well structured with natural acidity and firm tannins. |

2007 Baehner Fournier “SOLUS”, 100% Cabernet Sauvignon, Estate Bottled
This is our inaugural release of a purely varietal Cabernet Sauvignon. The wine has an almost bluish-purple hue. The nose opens with sour cherry and cranberry fruit. Following notes include tanned leather, wood smoke, sweet tobacco, mint and rose petals. At first the flavors are a little tight and edgy. But the wine has solid acidity and a firm backbone of tannin, and softens easily with decanting and aeration in the glass. I feel this wine has the stuffing and structure to age well and for quite a long period. Complementary foods demand steak or lamb, with any combination of tomatoes, olives and garlic.

2007 Baehner Fournier “V3” blend, 66% Cabernet Sauvignon, 17% Petit Verdot, 17% Merlot, Estate Bottled
This, our second release of our highly acclaimed “V3”, bears a striking resemblance to the initial 2005 offering, and I believe that over time may prove to be the finer wine. The color has a classic Bordeaux appearance of deep dusty garnet. Primary aromas come on strong with the vineyards’ signature deep ripe cherry, cassis, and plum, followed up by notes of pipe tobacco, cedar, fresh leather, gunpowder and, there is just no other term: pencil shavings. The wine is rich and powerful, complex, with multiple layers and a long luxurious finish. I suggest enjoying something rich with this wine, try prime rib or duck.
